Vinification and aging
Vinification The Roussanne was harvested very early, at the end of August 2024, and at low temperature to preserve high acidity. Clairette and white Grenache were fermented at low temperature to preserve minerality.Aging Roussanne was aged in oak barrels for 4 months, with regular stirring of the lees. Clairette and white Grenache were aged in stainless steel tanks.
