Blend of Côtes du Rhône enhanced with a reserve wine exclusively from crus of southern Rhone Valley to bring together structure, fruity aromas, freshness, mouthfeel, tanins and balance.
Vinification and ageing
Vinification
Various containers were used for vinification and ageing: Wine Globe, wooden truncated vats, stainless steel tanks and concrete tanks.
Ageing
A part of the Grenache was aged in Vinarium for 24 months: a unique piece entirely conceived by Xavier and his team. The result is a 70 hl vat made of wood and stainless steel, in wich five 200 liter barrels are immersed, themselves filled with wine. This system allows wine to benefit from a unique maturing environnement without any external influence.
The Syrah and Mourvèdre were matured in demi-muid and wooden tronconic tanks.
The Cinsault and the rest of the Grenache were aged in Wine Globe.
Food and wine pairing
Lasagnes with vegetables – Black pudding with apple sauce – Omelette with mushrooms – Chicken fried in the Provençal style.
